Flavours from my kitchen.
A collection of 24 recovered dishes and food ideas, from cooks Kris reviewed to names and concepts still being developed.
Access all areas during the beta. No subscription is required. Kris’s Kitchen is planned as a subscriber-only collection when paid memberships launch. Incomplete entries preserve the recovered information and say what is missing. They are not cooking instructions: we have not invented original quantities, methods, allergen or nutrition claims. The Sri-Kashan and Karang Adobo entries now include the owner-supplied cooking stages and actual adjustments. Unmeasured quantities remain identified; historical timing is a cooking record, not a validated instruction.
Reconstructed approach: marinate; build a butter, garlic and spice base; cook tomato purée; add chicken; finish with cream and butter; adjust and garnish.
This outline came from an earlier assistant reconstruction, not a fully verified original cooking session.

Cooking record · mise en place by stage
These are the supplied historical stages, including actual adjustments. Some amounts and serving quantities are still unmeasured. Check all product labels for allergens; a historical cooking time alone does not establish doneness.

450 g chicken breast, diced
2 tbsp Greek yoghurt or coconut milk
1 tsp paprika
1 tsp ground cumin
½ tsp turmeric
1 tsp garlic seasoning
1 tsp ground ginger

1 onion, sliced
4 medium garlic cloves, chopped
1 red chilli, sliced, plus 1 additional whole chilli
10–12 curry leaves
1 tbsp dried lemongrass
½ tsp cumin seeds
1 tbsp butter and 1 tbsp cooking oil
1 tsp paprika
Pinch of cinnamon or nutmeg
1 tsp tomato purée

Dry-toast cumin seeds for approximately 30–40 seconds and reserve.
Heat butter and oil. Fry curry leaves briefly until fragrant.
Add onions and cook until softened and slightly golden. Add garlic and chillies, then dried lemongrass.
Add paprika and cinnamon or nutmeg. Stir in tomato purée and fry briefly.
3 · Chicken and sauce
Ingredients for this stage
Marinated chicken from stage 1
400 ml coconut milk
Splash of whole milk; exact amount not recorded
Reserved toasted cumin seeds
Method
Add chicken and marinade to the aromatic base. Cook for approximately 5–6 minutes, stirring.
Add coconut milk and whole milk, return toasted cumin seeds and simmer gently until the chicken is cooked through and the sauce reduces.
4 · Final balance
Ingredients for this stage
Fresh coriander, chopped; amount not recorded
Additional lemon zest and lemon juice; amounts not recorded
Honey: originally suggested ½–1 tsp, but more was added without measuring
Salt to taste
Additional paprika as needed; amount not recorded
Optional butter; amount not recorded
Method
Taste the sauce and adjust salt. Add paprika if more warmth is needed.
Add honey to balance heat and acidity. Finish with coriander, lemon zest and a little lemon juice.
Rest briefly before serving with jasmine rice; rice quantity and cooking method were not recorded.
Kris’s cooking feedback
The first taste was dominated by chilli heat, with insufficient savoury depth. Salt made a major improvement; honey and additional paprika helped.
Dried lemongrass initially remained crunchy. Removing or blending it was considered, but the sauce was left to simmer. Its texture was no longer a problem when eaten with the chicken, rice and sauce.
Fresh coriander and honey were particularly important. Excellent overall result.
Marc and Nathan both thought it was brilliant after microwave reheating, despite less attractive presentation.

Original cook with separate version-two improvement notes
Inspiration: Filipino adobo sa gata adapted with coconut milk, lemon, orange zest, coriander, nigella and buttered jasmine rice.
What was recovered
450 g chicken breast. Actual sauce used 40 ml soy sauce and 200 ml water, replacing the initial 100 ml soy sauce / 150 ml water suggestion.
Original photograph described as a prominent shaped mound of white jasmine rice, creamy golden-brown chicken and sauce, orange zest, coriander, dark nigella seeds and paprika in a shallow bowl. Exact original image still to be matched.
Cooking record · mise en place by stage
These are the supplied historical stages, including actual adjustments. Some amounts and serving quantities are still unmeasured. Check all product labels for allergens; a historical cooking time alone does not establish doneness.
1 · Mise en place
Ingredients for this stage
450 g chicken breast, medium chunks
1 onion, sliced
5 garlic cloves, chopped or crushed
1 bay leaf
½–1 tsp black pepper
1 fresh chilli, optional
1 tbsp oil
Method
Prepare these separately from the liquid sauce.
2 · Actual adobo sauce
Ingredients for this stage
40 ml soy sauce
200 ml water
Juice of ½ lemon
1 tbsp honey
1 tsp paprika
Optional chilli flakes; amount not recorded
Method
Mix in a separate jug. These were the actual adjusted sauce quantities, not the initial suggestion.
3 · Build the base
Ingredients for this stage
Prepared ingredients from stage 1
Prepared sauce from stage 2
Method
Heat oil over medium-high heat. Fry onion for approximately 3–4 minutes.
Add garlic and optional fresh chilli, then chicken; lightly brown for 3–4 minutes.
Add bay leaf and black pepper. Pour in the prepared sauce, bring to a gentle simmer and cook uncovered for approximately 10–12 minutes.
4 · Coconut finish
Ingredients for this stage
150–200 ml coconut milk
Salt, if needed
Additional honey or lemon if required; amounts not recorded
Small knob of butter; weight not recorded
Small pinch of fresh orange zest
Method
Add coconut milk and simmer gently to combine the flavours. Taste and adjust seasoning. Reduce until creamy and rich.
During the actual cook the sauce was briefly brought to the boil, then simmered uncovered on low for approximately 15 minutes. The breast became slightly overcooked; this records the historical cook, not a fixed timing instruction for the next version.
Turn off the heat, add butter and a small amount of fresh orange zest.
5 · Rice and presentation
Ingredients for this stage
Cooked jasmine rice; quantity not recorded
Butter; amount not recorded
Fresh coriander
Orange zest
Nigella seeds
Small pinch of paprika
Method
Stir a little butter through cooked rice and form a neat mound on the plate.
Arrange chicken and sauce around it; garnish with coriander, a little orange zest, nigella seeds and a light dusting of paprika.
Kris’s cooking feedback
Creamy, coconut-rich and deeply savoury sauce, with gentle background heat.
Orange zest was a standout: fresh, fruity brightness complementing the saltiness. Coriander was subtle but noticeable.
The sauce tasted like a stew cooked for hours. Kris went back for a second helping.
Chicken breast was slightly overdone.
Marc saw the photograph and replied: “That looks good man, You can be filipino now 😂”. A tasting portion was planned; his tasting verdict is not recorded.
Ideas for another version — not confirmed original changes
Version two, not yet tested: reduce the time the breast spends simmering. Consider briefly browning it, removing it while the sauce reduces, then returning it to finish cooking.
For any next version, verify doneness with a safe core temperature/time combination rather than relying on timing alone.
Still needed before this is a complete recipe

What was recovered
Used a brioche bun, bacon, egg, melted ibérico cheese and two tomato slices.
Coriander replaced the initially considered basil.
Lime, garlic granules, cucumber and spring onions were available during planning; exact final use is not fully recorded.
Buns were toasted in butter.
Kris made a sauce rated 10/10 and wanted to repeat it.
Kris’s cooking feedback
The sandwich became soggy. Keep the sauce.
Leave out the ibérico next time, although it melted well.
The egg was good; scrambled egg might work better.
Kris suspected the tomato slices contributed and wondered whether butter-toasting also contributed. These were observations and suspicions, not a confirmed diagnosis.

Kris’s cooking style
Improvise with aromatics, spices, creaminess, citrus and heat; Kris describes cooking “with my nose”.
Write ingredients grouped by cooking stage, with clear sequential instructions, UK English, metric measurements and Celsius.
Preserve original names and separate dishes; never identify name-only records with another recipe.
Any future reconstruction must be labelled as newly reconstructed, not the recovered original. Every method ingredient must appear in the ingredient list.
